Der Assmannshäuser Höllenberg Pinot Noir 2020 gehört zu den kraftvollsten, charakterreichsten und begehrtesten Weinen von Chat Sauvage. Ein Pinot Noir mit großer Tiefe, markanter Mineralik und beeindruckender Energie – gefährlich präzise, druckvoll und voller Spannung. Ein Ausnahmewein aus einer Lage, die seit Jahrhunderten für Weltklasse-Spätburgunder steht.


Herkunft / Lage / Vinifikation

Die Trauben stammen aus den ältesten Weinbergen von Chat Sauvage, mit 40–50 Jahre alten Rebstöcken, die extrem niedrige Erträge, aber maximale aromatische Konzentration liefern. Ein Teil der Reben wächst in bis zu 70 % steilen Schiefersteillagen des Assmannshäuser Höllenbergs – eines der berühmtesten Pinot-Noir-Terroirs Deutschlands.
Die kargen Schieferböden sorgen für markante Steinfrische, rauchige Würze und eine natürliche Straffheit. Vinifiziert wird traditionell: selektive Lese, spontane Vergärung, behutsame Extraktion und Ausbau in burgundischen Pièces, mit viel Geduld und minimalem Eingriff.

Nase: Erdige Würze, dunkle rote Frucht, Waldboden und feine Schiefermineralik; tief, komplex und vielschichtig.
Gaumen: Rassig, mittelkräftig und hochkonzentriert; präzise rote Frucht, feine Kräuter, enorme Spannung und sehr konzentrierte Tanninstruktur.
Abgang: Extrem lang, energetisch und treibend – purer Höllenberg-Charakter mit großer Intensität.


Foodpairing & Empfehlung

Ideal zu Wild, geschmorten Gerichten, Pilzragout oder mittelkräftigem Käse. Ein Wein für Kenner, Sammler und Liebhaber hochkonzentrierter, schiefergeprägter Pinot Noirs. Aufgrund der begrenzten Produktion besonders begehrt.
