Het oogsten van de syrah druiven gebeurt bij Domaine de Fabrègues uit de Pays D'oc altijd ‘s nachts. De nachtelijke koelte helpt om de frisheid in de wijn te houden. De temperatuur-gereguleerde maceratie en gisting heeft als doel om al het mooie syrah-fruit te behouden, maar tevens om de wijn de juiste structuur te geven. De wijn wordt gerijpt in betonnen vaten. Het is een moderne, toegankelijke stijl, en de wijn is fruitgedreven, soepel en kruidig. Heerlijk bij mediterrane gerechten.
