De filosofie van Javier Sanz is gebaseerd op het behoud van wijngaarden van vóór de phylloxera, lokale druivensoorten en het herstel van variëteiten die bijna zijn uitgestorven. Het domein omvat 104 hectare. De wijngaarden van Javier Sanz zijn aangelegd in een mozaïek van percelen, boerderijen en kleine wijngaarden, allemaal binnen de gemeente La Seca in Valladolid. De frisheid, complexiteit en evenwicht van de wijnen zijn het resultaat van de persoonlijkheid van een gebied, een kelder en een traditie.

Javier gelooft in het land en duurzame wijnbereiding om zo de naam Rueda hoog in het vaandel te houden. De wijnstokken groeien goed dankzij drie elementen: de grond (grindkiezels); het continentale klimaat (met een groot temperatuurbereik overdag en een lage luchtvochtigheid) en de Verdejo druif (met een grote persoonlijkheid, waardoor deze perfect is voor het maken van wijn).

Ondertussen is de vierde generatie van wijnmakers aan de beurt die de traditie van dit prachtige bedrijf al meer dan 150 jaar voortzetten.

Het fruit is afkomstig de 150 jaar oude wijngaard El Pago de Saltamontes die de phylloxera-uitbraak heeft overleefd. Javier produceert nu deze elegante, unieke, historische wijn, waarvan de druiven zorgvuldig worden geoogst en negen maanden sur lie rijpen.
