ICÒNIC 2018 is een lang gerijpte Brut Nature uit het hart van Corpinnat, precies en energiek met een uitzonderlijk fijne mousse en opvallende frisheid. Wat betekent Brut Nature en waarom proef je zoveel spanning. Er wordt geen suiker toegevoegd na het dégorgement, waardoor het karakter van de druiven en de herkomst ongefilterd in het glas staat.

Wijngaarden en regio

De druiven komen van met de hand geoogste percelen in de vallei van Anoia, waar kalkrijke bodems en een mild mediterraan klimaat zorgen voor aromatische basiswijnen met hoge natuurlijke zuren. De oogst van 2018 liep van 29 augustus tot 5 oktober, met een rustig rijpingsseizoen dat perfect was voor een lange flesrijping. Corpinnat staat hier voor biologische teelt, handpluk en tweede gisting in de fles, allemaal met focus op terroirexpressie.

Vinificatie en rijping

Elke druivensoort vergist afzonderlijk met zorgvuldig geselecteerde huiseigen gisten. De eerste gisting duurt ongeveer 28 dagen bij 16 graden, samen met de fijne lie voor extra diepte. De tirage, dat is de botteling met gist en suiker om de tweede gisting op fles te starten, wordt gevolgd door rijping sur lie bij 17 graden gedurende ongeveer 6 jaar. De dégorgementdatum staat op het achteretiket en markeert het moment waarop het gistbezinksel wordt verwijderd. Brut Nature betekent hier nul dosage, wat de wijn strak, zuiver en gastronomisch houdt. Alcohol bedraagt 11,5 procent en de totale zuurgraad 6,0 gram per liter, cijfers die de spanning in het glas verklaren. De wijn is biologisch en vegan gecertificeerd.

Druivensamenstelling

Macabeu 35 procent. Macabeu brengt witte bloesem, wit fruit en een ronde aanzet.
Xarel·lo 28 procent. Xarel·lo geeft ruggengraat, ziltige mineraliteit en bewaarpotentieel door zijn hogere natuurlijke zuren.
Parellada 37 procent. Parellada zorgt voor luchtige fraîcheur, fijne citrus en een uiterst delicate mousse.

Samen levert dit een profiel op dat tegelijk rijp en knisperend is, precies wat je zoekt in Gran Reserva Brut Nature.

Proefnotities en serveertips

Het bouquet opent met rijpe witte vruchten, citrusschil en subtiele brioche. In de mond proef je precisie en lengte, met zeer fijne pareling, romige textuur en een droge, kristalheldere finale. Schenk op 8 tot 10 graden. Perfect bij oesters, tartaar van zeebaars of tempura van zeevruchten, en verrassend goed naast kalfslende met lichte jus of gerechten met umami en milde specerijen.

Thank you for allowing me to try your NatureWise Vitamin D3. There are indeed so many reasons why we should supplement Vitamin D. It is necessary for so many crucial processes in our bodies; from helping us absorb enough calcium and helping us have strong bones and teeth.
